Sumatra Mandheling coffee beans are known for having a taste that is rich, full-bodied, earthy, rustic yet have a mild acidity. While higher acidity coffees overall are a deeply satisfying brew, it can be too much for coffee drinkers who prefer a milder experience. The low acidity makes Sumatra Mandheling a great option for people with acid sensitivities. The Catimor and Typica coffee plants harvested for the natural almond, chocolate, and lemongrass notes are enhanced by wet-hulling and sun drying the coffee beans. While there is increased experimentation among processing methods in Indonesia, the cultural predominance and economic advantages of wet hulling continue to permeate the region giving its unique flavors.
Process Method. Wet-hulled. Cupping score: 87
The wet-hulled coffee process, locally known as Giling Basah, is the method of choice in Indonesia due to the humid climate. The wet-hulled process has become synonymous with Indonesian coffees and contributes to its unique cup profile. In the wet-hulled process, coffee cherries are generally depulped at the farm level using hand-cranked machines. The cherries are then fermented overnight to help break down the mucilage, which is subsequently washed off. Afterwards, the coffee is quick-dried to 30-50% moisture and dried to between 11%-13% as it makes its way through the supply chain into an exporter’s mill.

In Colombia, green coffee beans are considered specialty if it scores above 80 points, has zero primary defects, and has no more than five secondary defects in a 500g sample.
The Supremo coffee bean classification signifies that the green coffee has a screen size of 17. That means the beans have passed through a sifter with holes that are 18/64 inch wide. Larger-sized beans are often correlated with higher quality, although screen size is not the only indicator of coffee quality.

This coffee has been classified as SHG (Strictly High Grown) and EP (European Standards). Strictly High Grown (SHG) coffee signifies that the coffee was grown above 1,200 meters. Coffees grown between 900 – 1200 meters above sea level are classified as High Grown (HG). Higher elevations mean slower coffee cherry and bean development, leading to more nutrient density and more flavor. The challenges associated with production at higher elevations encourage higher standards to streamline labor logistics for the best possible crop quality, particularly for the smaller volume yielded from the slow-growing process. In addition to being hand sorted with European Preparation (EP) standards for less than eight defects per 300 grams of beans, the labor-intensive processes involved in producing this coffee result in a consistently high-quality clean cup.

Huehuetenango coffee is grown at heights up to 6,500 feet (2,000masl) in dry and frost-free conditions. By necessity, farmers in this highly remote area often set up their own mills along the many rivers to process their coffee.
Temperature: 68-70F

Humidity: 70-80%
Altitude: 5,000-6,500ft
A Strictly Hard Bean (SHB) coffee grows at altitudes of 1,200 meters above sea level or higher. When coffee cherries grow at high altitudes, they tend to mature more slowly. This allows the fruit to take in more nutrients, resulting in denser, sweeter green coffee beans that are considered higher quality. During dry milling, this lot was further sorted to European Preparation (EP) standards with a minimum screen size of 15 and above and a maximum of eight defects within 300 grams.
EP stands for European Preparation, a quality standard indicating that green coffee beans have undergone rigorous screen grading and hand-sorting to remove defects.
